Ingredients
Protein
- 1 pound Foster Farms® Organic Chicken Thin-Sliced Breast Fillets
Vegetables
- 1 cup organic asparagus spears, trimmed and cut into 3-inch pieces
- 1 cup organic baby carrots (or regular carrots, thinly sliced, peeled and halved)
- 1/2 cup organic fresh or frozen peas
Pasta
- 10 ounces organic linguine pasta
Other Ingredients
- 2 teaspoons organic olive oil
- 4 tablespoons organic butter
- 1 tablespoon organic lemon juice
- Salt and pepper to taste
- 2 tablespoons organic chopped parsley
- Optional: lemon wedges for garnish
Instructions
- Heat Olive Oil: Warm 2 teaspoons of organic olive oil in a large pan over medium-high heat until shimmering and hot for sautéing the chicken.
- Season Chicken: Generously season both sides of the chicken thin-sliced breast fillets with salt and pepper to enhance flavor.
- Cook Chicken: Place the seasoned chicken breasts in the hot pan. Cook for 4-5 minutes on each side until golden brown and cooked through. Once done, remove and slice crosswise.
- Cook Pasta and Vegetables: Prepare the linguine in salted boiling water following package instructions. Four minutes before the pasta is done, add the asparagus, baby carrots, and peas to the boiling water to cook together, ensuring vegetables retain some crispness.
- Drain and Reserve Liquid: Drain the pasta and vegetables, reserving 1/4 cup of the cooking liquid for later use in the sauce.
- Make Sauce and Combine: Return the pasta and vegetables to the pot and set heat to low. Add the butter and organic lemon juice, stirring to coat everything evenly. Gradually add the reserved pasta water, one tablespoon at a time, to reach desired sauce consistency. Season with salt and pepper to taste.
- Serve: Arrange the sliced chicken over the pasta and vegetables. Sprinkle with chopped parsley for freshness and serve with optional lemon wedges to brighten the dish.
Notes
- To ensure tender chicken, do not overcrowd the pan when cooking; cook in batches if necessary.
- Adding vegetables towards the end of the pasta cooking time preserves their vibrant color and slight crunch.
- Reserved pasta water contains starch that helps thicken and bind the sauce.
- Variations can include adding grated Parmesan cheese or substituting linguine with gluten-free pasta if preferred.
- Organic ingredients are recommended for a fresher, cleaner taste but can be substituted with non-organic equivalents.
