Ingredients

Lasagna Roll-Ups:

  • 8 lasagna noodles, cooked
  • 2 cups cooked, shredded chicken
  • 1 cup ricotta cheese
  • 1 cup spinach (fresh or thawed frozen)
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Sauce and Topping:

  • 2 cups marinara sauce
  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated parmesan cheese


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the roll-ups.
  2. Prepare Filling: In a medium bowl, combine ricotta cheese, shredded chicken, spinach, egg, garlic powder, salt, and pepper. Mix thoroughly until well incorporated.
  3. Assemble Roll-Ups: Lay out each cooked lasagna noodle flat. Spread a spoonful of the chicken and ricotta mixture evenly over each noodle, then carefully roll them up tightly.
  4. Prepare Baking Dish: Spread 1 cup of marinara sauce evenly in the bottom of a baking dish. Place each roll-up seam side down in the dish to prevent them from unrolling during baking.
  5. Add Sauce and Cheese: Pour the remaining marinara sauce over the roll-ups. Sprinkle shredded mozzarella and grated parmesan cheese evenly on top.
  6. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes to heat and meld flavors.
  7. Bake Uncovered: Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden brown.
