Ingredients
Chicken
- 1.5 lbs boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Pasta
- 1 lb pasta (rotini, penne, or farfalle)
Dressing
- 1 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1/4 cup Caesar salad dressing (bottled or homemade)
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 1/2 cup milk or cream (to thin the dressing if needed)
Salad Add-ins
- 1 cup chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup croutons
Instructions
- Prepare the Chicken Breasts: If the chicken breasts are uneven in thickness, gently pound them with a meat mallet until they are about 1/2 inch thick to ensure even cooking.
- Season the Chicken: In a small bowl, mix together garlic powder, onion powder, paprika, salt, and pepper. Sprinkle this spice blend evenly over both sides of the chicken breasts, pressing lightly so the seasoning sticks well.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. When the oil is hot and shimmering, place the seasoned chicken breasts in the skillet. Cook each side for 5-7 minutes until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
- Rest and Dice the Chicken: Remove the cooked chicken from the skillet onto a cutting board and allow it to rest for at least 5 minutes to retain juices. Then dice the chicken into bite-sized pieces.
- Boil the Water: Fill a large pot with approximately 4 quarts of salted water and bring it to a rolling boil on high heat.
- Cook the Pasta: Add the pasta to the boiling water and cook according to package instructions, typically 8-10 minutes, until al dente.
- Drain and Rinse the Pasta: Drain the cooked pasta in a colander and immediately rinse it under cold water to stop the cooking process and prevent clumping.
- Cool the Pasta: Spread the rinsed pasta on a baking sheet to cool completely before mixing with dressing and other ingredients.
- Combine the Ingredients (Dressing): In a large bowl, whisk together mayonnaise, grated Parmesan cheese, Caesar salad dressing, lemon juice, Dijon mustard, minced garlic, salt, and pepper until a smooth dressing forms.
- Adjust Consistency of Dressing: If the dressing is too thick, add milk or cream one tablespoon at a time until you reach a desired pourable consistency.
- Taste and Adjust Dressing: Taste the dressing and modify seasonings as needed to balance flavors.
- Combine Pasta and Dressing: Add the cooled pasta to the bowl with dressing and toss gently to coat the pasta evenly.
- Add the Chicken: Incorporate the diced chicken into the pasta and dressing mixture, tossing gently to combine all components.
- Incorporate the Vegetables: Add chopped romaine lettuce, halved cherry tomatoes, and thinly sliced red onion into the salad. Toss gently until evenly distributed.
- Chill the Salad: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes to allow flavors to meld – can be chilled up to 2 hours.
- Add the Croutons: Just before serving, add the croutons to the salad and toss gently to mix for added crunch.
- Serve and Enjoy: Serve the Chicken Caesar Pasta Salad chilled, garnished optionally with extra Parmesan cheese or a sprinkle of black pepper.
Notes
- For juicier chicken, avoid overcooking and let it rest after cooking.
- Rinsing the pasta in cold water stops further cooking and prevents it from sticking.
- Adjust the dressing consistency with milk or cream based on your preference.
- Adding croutons just before serving keeps them crunchy.
- Use fresh vegetables and quality Caesar dressing for the best flavor.
- This salad can be made ahead and refrigerated for healthier convenience.
