Description
A refreshing and hearty Chicken Caesar Pasta Salad combining tender grilled chicken, crisp romaine lettuce, and perfectly cooked pasta tossed in creamy Caesar dressing, topped with crunchy croutons and a sprinkle of Parmesan cheese. Perfect for a quick lunch or light dinner.
Ingredients
Pasta
- 8 oz penne or rotini pasta
Salad
- 2 cups cooked and sliced grilled chicken breast
- 2 cups chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup grated Parmesan cheese
- 1 cup croutons (preferably Parmesan or garlic-flavored)
Dressing
- 1/2 cup Caesar salad dressing (homemade or store-bought)
- Freshly ground black pepper, to taste
- Optional chopped fresh parsley for garnish
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the penne or rotini pasta and cook until al dente according to package instructions, usually about 8-10 minutes. Drain and rinse the pasta with cold water to stop the cooking process and cool it down.
- Combine Salad Ingredients: In a large mixing bowl, combine the cooled pasta, cooked and sliced grilled chicken breast, chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, and grated Parmesan cheese. Toss gently to mix all the ingredients evenly.
- Add Dressing: Pour the Caesar salad dressing over the pasta and chicken mixture. Toss gently again to fully coat the salad with the dressing without bruising the lettuce leaves.
- Finish with Croutons and Pepper: Just before serving, sprinkle the salad with the Parmesan or garlic-flavored croutons for crunchiness. Add freshly ground black pepper to taste for an extra zing.
- Garnish: Optionally, garnish the salad with chopped fresh parsley to add a pop of color and fresh herbal note before serving.
Notes
- You can use leftover grilled chicken or rotisserie chicken for convenience.
- For a lighter version, substitute Caesar dressing with a low-fat or yogurt-based dressing.
- The salad is best served immediately to keep the croutons crunchy.
- Feel free to add other vegetables like cucumbers or bell peppers for extra flavor and crunch.
- To make it gluten-free, use gluten-free pasta and croutons.
