  • 1 (15 oz.) can whole kernel corn, drained
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 oz. package taco seasoning
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and spray a 9″x13″ baking dish with nonstick spray to prevent sticking.
  2. Prepare chip base: Crush the Nacho Cheese Doritos and place half of them evenly on the bottom of the prepared casserole dish, creating a crunchy base layer.
  3. Mix ingredients: In a large mixing bowl, combine sour cream, cream of chicken soup, drained diced tomatoes with green chilies, drained corn, rinsed black beans, taco seasoning, and 1 cup of shredded cheddar cheese. Mix thoroughly.
  4. Add chicken: Stir the cooked and shredded chicken into the mixture until everything is fully combined.
  5. Assemble casserole: Spread the chicken mixture evenly over the layer of crushed chips in the casserole dish. Top this with the remaining shredded cheddar cheese and the rest of the crushed Doritos for a crispy, cheesy topping.
  6. Bake: Bake uncovered in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly throughout.
