Description

This Cheesy Baked Burrito Casserole combines all the classic burrito flavors into a delicious, comforting casserole that’s easy to prepare and perfect for feeding a crowd. Layers of seasoned ground beef, refried beans, tortillas, enchilada sauce, and melted Mexican cheese blend together to create a hearty and satisfying meal with a cheesy, bubbly top baked to perfection.

Ingredients

Meat and Vegetables

  • 1 pound Ground Beef
  • 1 small Onion, chopped

Seasoning and Sauces

  • 1 package Taco Seasoning
  • 1 can Refried Beans
  • 1 can Cream of Mushroom Soup, undiluted
  • 1/2 cup Sour Cream
  • Enchilada sauce (quantity not specified, use approximately 1 cup divided for layering)

Carbohydrates and Cheese

  • 1 package of large flour tortillas
  • 2 1/2 cups Shredded Mexican Blend Cheese
  • Green chiles (quantity not specified, approximately 1/4 cup, optional for topping)

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
  2. Cook the Beef: In a skillet over medium heat, brown the ground beef with the chopped onion until fully cooked. Drain excess fat, then add the taco seasoning along with water as per seasoning instructions and simmer for 5 minutes to blend flavors.
  3. Mix Filling: In a large bowl, combine the seasoned beef mixture, refried beans, and half of the enchilada sauce, stirring well to evenly mix all ingredients.
  4. Layer the Casserole: Spread about 1/4 cup of the remaining enchilada sauce evenly on the bottom of the baking dish. Tear 2 tortillas to fit the dish and layer them over the sauce. Add half of the beef and bean mixture on top, followed by one-third of the shredded cheese. Repeat the layers with tortillas, the remaining beef mixture, and another one-third of the cheese.
  5. Top and Bake: Finish with a final layer of tortillas, the remaining enchilada sauce, remaining cheese, and sprinkle with green chiles. Cover the baking dish with foil and bake for 25 minutes. Then remove the foil and bake an additional 10 minutes until cheese is bubbly and golden.
  6. Rest and Serve: Allow the casserole to stand for 10 minutes after baking to set. Serve warm with your favorite toppings such as sour cream, salsa, or guacamole.

Notes

  • For a spicier casserole, use hot enchilada sauce and add sliced jalapeños to layers.
  • You can substitute ground beef with ground turkey or shredded cooked chicken for a leaner option.
  • The casserole can be assembled up to one day ahead; if doing so, increase baking time by 10 minutes to ensure it’s hot throughout.
  • This dish freezes well before baking; thaw overnight in the refrigerator before baking.
