Instructions

  1. Prepare pans and preheat oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, combine the all-purpose flour, baking soda, cinnamon, and salt. Stir and set aside.
  3. Combine wet ingredients: In a large bowl, beat the vegetable oil and granulated sugar until well combined. Add eggs one at a time, beating thoroughly after each addition to ensure a smooth batter.
  4. Add carrots, pineapple, and walnuts: Stir in the grated carrots, drained crushed pineapple, and chopped walnuts if using, making sure they are evenly distributed in the batter.
  5. Incorporate dry ingredients: Add the flour mixture to the carrot mixture and gently stir until just combined to avoid overmixing, which could make the cake dense.
  6. Bake the cake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
