Description

Delightful carrot cake pops made from moist, spiced carrot cake mixed with creamy cream cheese frosting, dipped in vibrant orange and green melting chocolate to resemble cute little carrots. Perfect bite-sized treats for parties, celebrations, or a fun dessert.


Ingredients

Carrot Cake Base

  • 1 box carrot cake mix (plus ingredients required on the box: typically eggs, oil, and water)
  • 1 cup cream cheese frosting, softened (plus more as needed)

Coating and Decoration

  • 2-3 cups orange melting wafers
  • 1 cup green melting wafers
  • 20 sticks (lollipop or cake pop sticks)


Instructions

  1. Bake the Cake: Prepare the carrot cake by following the instructions on the box, adding the required ingredients. Once baked, allow the cake to cool completely to room temperature to avoid melting the frosting in the next step.
  2. Mix with Frosting: Crumble the cooled carrot cake into a large bowl. Add 1 cup of softened cream cheese frosting, mixing thoroughly until the mixture holds together but is still soft enough to shape.
  3. Shape the Cake Pops: Take golf ball-sized portions of the cake mixture and roll them into small carrot shapes, tapering one end. Insert a stick at the tapered end to form a handle. Place the shaped cake pops on a baking sheet lined with parchment paper. Refrigerate for 30 minutes to firm up.
  4. Create Carrot Tops: Melt the green melting wafers in a microwave-safe bowl in 30-second increments, stirring after each interval until smooth. Transfer the melted chocolate into a zip-top bag, snip a small corner, and pipe carrot top shapes onto parchment or wax paper. Let these set completely to harden.
  5. Melt Orange Coating: Melt the orange melting wafers in a microwave-safe bowl, similarly in 30-second intervals, stirring until completely smooth.
  6. Coat Cake Pops: Dip each chilled cake pop into the melted orange chocolate, allowing the excess to drip off. Place the coated pops back on the parchment paper. Attach the pre-made green carrot tops to the exposed stick end of each cake pop. Let the coating harden.
  7. Decorate and Finish: Pour remaining orange melted wafers into a zip-top bag, snip the corner, and drizzle small streams over the cake pops for decorative effect. Allow everything to set fully before serving.
