These Caramelized Onion and Pumpkin Puff Pastry Pockets combine the sweetness of roasted pumpkin puree and deeply caramelized onions, gently spiced with cinnamon and nutmeg, all encased in flaky, golden puff pastry. Perfect as an elegant appetizer or a comforting snack during the fall season.
Ingredients
Pumpkin Puree
- 1 medium sugar pumpkin (about 2-3 lbs)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Caramelized Onions
- 2 onions (thinly sliced)
- 2 tbsp olive oil
Pastry and Assembly
- 1 sheet puff pastry (thawed)
- 1 egg (beaten)
Instructions
- Roast the Pumpkin: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Cut the sugar pumpkin in half and scoop out the seeds. Place the pumpkin halves cut side down on the prepared baking sheet. Roast for 1 to 1.5 hours until the pumpkin flesh is very soft. Let it cool for 15 minutes.
- Prepare Pumpkin Puree: Scoop out the roasted pumpkin flesh and place it in a food processor. Puree until smooth and set aside.
- Caramelize the Onions: Heat olive oil in a skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 30 minutes until they turn a deep golden brown and become sweet and tender. Allow to cool slightly.
- Make the Filling: In a bowl, combine the caramelized onions with the pumpkin puree. Add cinnamon and nutmeg, mixing thoroughly to integrate the spices evenly.
- Prepare Puff Pastry Circles: Roll out the thawed puff pastry on a lightly floured surface to about 1/4 inch thickness. Cut the dough into 4-inch diameter circles. On half of the circles, cut small crosses on the top surface to allow steam to escape during baking.
- Assemble the Pockets: Place 1 tablespoon of the pumpkin and onion filling in the center of each uncut circle. Brush the edges with the beaten egg to help seal. Top with the cross-cut circles, pressing and crimping the edges firmly to seal the pockets.
- Chill Before Baking: Arrange the assembled pockets on a parchment-lined baking sheet. Refrigerate for 30 minutes to help the pastry hold its shape and prevent shrinking during baking.
- Bake the Puff Pastry Pockets: Preheat the oven to 400°F (200°C). Remove the pockets from the refrigerator and brush the tops with the remaining beaten egg for a shiny, golden crust. Bake for 18 to 20 minutes until the pastry is puffed and golden brown.
- Cool and Serve: Allow the pockets to cool slightly on a wire rack to set the filling before serving warm or at room temperature.
Notes
- Using sugar pumpkin provides the perfect sweetness and texture for the puree; however, other small pie pumpkins can be used as alternatives.
- Caramelizing onions requires patience but adds deep sweetness that complements the pumpkin filling beautifully.
- Make sure to chill the assembled pockets before baking to prevent the puff pastry from puffing too much or losing shape.
- The cross cuts on the top pastry piece allow steam to escape, preventing soggy pockets.
