Ingredients
Vegetables & Herbs
- 4 cloves of garlic, minced
- 2 medium onions, thinly sliced
- 1 tbsp fresh cilantro, chopped
Spices & Seasonings
- 1 tsp mixed herbs
- Salt, to taste
- Black pepper, to taste
- 1 tsp red chilli flakes
Dairy & Oils
- 1 tbsp butter
- 1 tbsp oil (vegetable or olive oil)
- 1 cup milk
- 1 cheese slice (such as processed or cheddar)
Other
- Bread slices (4 pieces, preferably thick-cut)
Instructions
- Sauté Onions: Heat butter and oil in a pan over medium heat. Add sliced onions and cook for 3-4 minutes, stirring occasionally, until the onions become translucent and start to soften.
- Add Garlic: Add minced garlic to the pan, stirring to combine. Cook for another 2 minutes until the garlic is fragrant but not browned.
- Season: Sprinkle in salt, black pepper, mixed herbs, red chilli flakes, and chopped fresh cilantro. Stir well to evenly distribute the spices and herbs among the onions.
- Add Milk and Cheese: Pour in the milk and stir continuously. Allow the mixture to come to a gentle boil, then add the cheese slice. Stir until the cheese melts completely and combines into a creamy sauce.
- Thicken Sauce: Continue to cook the sauce on medium heat, stirring frequently, until it thickens to a creamy consistency that can coat the back of a spoon.
- Prepare Toast: Toast the bread slices until warm and crispy. Spoon the caramelised onion and cheese sauce generously over the toasted bread.
- Serve: Serve immediately as a delicious, warm snack or light meal.
Notes
- You can substitute the cheese slice with shredded mozzarella or cheddar for a different texture.
- Use thick-cut bread or sourdough for a heartier toast.
- If you prefer less spice, reduce the red chilli flakes or omit them.
- Cooking onions low and slow can develop even more sweetness if you have additional time.
- This recipe works well as an appetizer or savory breakfast option.
