Ingredients
Phyllo Cups
- 15 mini phyllo shells (such as Athens brand)
Filling and Topping
- 2 tablespoons blackberry jam
- 2 tablespoons honey
- 3 ounces brie, skin removed and cut into 1/2” cubes
- 15 blackberries, rinsed and dried
- 2-3 sprigs fresh thyme (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the phyllo cups.
- Assemble Cups: Arrange the mini phyllo shells evenly on a baking sheet. Place a small dab of blackberry jam and honey inside each shell to create a sweet base for the cheese. Then, top each one with a cube of brie cheese.
- Bake: Bake the assembled shells in the preheated oven for 6-8 minutes, or until the brie is melted and the phyllo shells turn a very light golden brown.
- Garnish and Serve: Remove from the oven and immediately top each cup with a fresh blackberry and a few thyme leaves. Optionally, drizzle additional honey over each for extra sweetness. Serve warm right away to enjoy the gooey melted brie and fresh flavors.
Notes
- Remove the rind from the brie before cubing to ensure a smooth, creamy bite.
- Use fresh blackberries for the best flavor and texture.
- These phyllo cups are best served immediately after baking to enjoy the melted brie.
- If preferred, substitute blackberry jam with another fruit preserve like raspberry or apricot.
- You can prepare the cups ahead but bake them just before serving to keep shells crisp.
