- 1 whole red bell pepper, sliced into rounds
- 1 whole green bell pepper, sliced into rounds

- Ground black pepper, to taste
- 1/2 tsp red pepper flakes
- 1 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Prepare the aromatics and base: Heat the olive oil in a large skillet or cast iron pan over medium heat. Add the chopped onion and minced garlic, cooking until fragrant, approximately 3 minutes. Then, stir in the diced tomatoes to combine.
- Create the sauce: Add the coconut milk, sour cream (if using), and tomato paste to the skillet. Stir well to incorporate all ingredients into a smooth sauce. Allow the mixture to cook for about 3 minutes to meld the flavors.
- Add peppers and fish: Place the sliced red, green, and yellow bell peppers and the cod chunks into the skillet. Season with sea salt, ground black pepper, and red pepper flakes. Cover the skillet, and let the stew simmer gently for 10 to 12 minutes.
- Turn the fish: Approximately three-quarters through the cooking time, carefully turn the cod chunks, especially if some pieces have not been fully submerged in the broth. This ensures even cooking throughout.
- Finish and garnish: Once the fish is cooked through and the peppers are tender, remove the lid. Garnish the stew with fresh chopped cilantro and serve hot.
