Description

These Blueberry Cheesecake Protein Balls are a delicious and nutritious no-bake snack, combining the flavors of creamy cheesecake, sweet blueberries, and protein-packed ingredients. Perfect for a quick energy boost or a healthy dessert alternative.

Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup freeze-dried blueberries
  • Pinch of salt

Wet Ingredients

  • 1/4 cup cream cheese, softened
  • 2 tablespoons honey
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine dry ingredients: In a large mixing bowl, mix together the rolled oats, vanilla protein powder, and a pinch of salt until well combined.
  2. Add wet ingredients: Add softened cream cheese, almond butter, honey, and vanilla extract to the dry mixture.
  3. Form dough: Mix everything together until a thick dough forms. If the mixture feels too dry, add water one teaspoon at a time until it holds together properly.
  4. Fold in blueberries: Gently fold the freeze-dried blueberries into the dough evenly without crushing them.
  5. Shape protein balls: Scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands.
  6. Chill: Place the protein balls in the refrigerator and chill for at least 30 minutes to firm up before serving for best texture.

Notes

  • You can substitute almond butter with peanut butter if preferred.
  • If you want the balls sweeter, add a little more honey to taste.
  • Freeze-dried blueberries provide a crunchy texture; fresh or dried blueberries will not hold the same texture.
  • Store the protein balls in an airtight container in the fridge for up to one week.
  • These can also be frozen for up to one month and thawed in the fridge before eating.
