Featuring juicy pan-seared chicken breasts seasoned with ranch, crispy bacon, fresh tomato slices, chopped romaine lettuce, and a drizzle of ranch dressing, it’s a quick and versatile dish perfect for a satisfying lunch or dinner.
Ingredients
Chicken and Seasoning
- 2 pounds boneless, skinless chicken breasts (3-4 breasts)
- 1 tablespoon olive oil
- 1 tablespoon ranch seasoning
Additional Ingredients
- 4 ounces bacon
- 1 heart Romaine lettuce, chopped
- 1 large tomato, sliced
- 1 tablespoon Ranch dressing
Instructions
- Marinate the Chicken: Combine the chicken breasts with olive oil and ranch seasoning in a bowl. Set aside to marinate, allowing the flavors to infuse the chicken.
- Cook the Bacon: Heat a large skillet over medium heat and add the bacon. Cook for 5-6 minutes, turning as needed until crispy. Remove the cooked bacon and place on a paper towel-lined plate to drain excess grease.
- Sear the Chicken: Place the marinated chicken breasts in a single layer in the skillet using the reserved bacon grease for added flavor. Cook without touching for 3-4 minutes until nicely browned.
- Flip and Cover: Flip the chicken and cook for 1-2 minutes more. Then, cover the skillet and reduce the heat to low. Continue cooking for 4-6 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Assemble the Skillet: Top each cooked chicken breast with a slice of tomato, a slice of crispy bacon, and a drizzle of ranch dressing. Optionally, add chopped romaine lettuce on the side or as a topping for added freshness.
- Serve and Enjoy: Serve the BLT chicken skillet on its own, as a sandwich, or over a bed of salad greens for a quick and delicious meal.
Notes
- Make sure to cook the chicken to an internal temperature of 165°F to ensure it is safe to eat.
- Leftover bacon grease adds great flavor to the chicken when cooking, so avoid discarding it.
- This recipe is versatile – feel free to serve it as a sandwich or over a salad.
- For a lower-fat version, use turkey bacon or leaner cuts of chicken.
- Romaine lettuce adds a crisp texture, but you can substitute with your preferred leafy green.
