Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to prevent sticking and facilitate easy cleanup.

  3. Mix Dough: Warm ¼ cup of Biscoff cookie butter in a microwave-safe bowl for 15-20 seconds and stir well. Add this melted cookie butter along with the softened cream cheese to the food processor. Pulse until all ingredients combine into a thick, uniform dough.
  4. Form Balls: Scoop out the dough and, using your hands, roll it into 1-inch balls. Place these balls on the prepared baking sheet. Chill them in the refrigerator for at least 1 hour or in the freezer for 20 minutes to set.
  5. Melt Chocolate: Before removing the chilled balls, melt the finely chopped white chocolate in the microwave. Heat in 30-second increments, stirring after each, until the chocolate is completely smooth and melted.
  6. Coat Truffles: Using a fork or dipping tool, dip each chilled ball into the melted white chocolate, coating it evenly. Gently shake off excess chocolate and place the coated truffles back onto the parchment-lined baking sheet.
  7. Chill Coating: Return the baking sheet with chocolate-coated truffles to the fridge and chill for an additional 1 hour, or until the chocolate shell is fully set.
