Ingredients
For the Pasta:
- sea salt, to taste
- 1 cup orzo pasta
For the Vegetables:
- 1/2 English cucumber, diced
- 1 bell pepper, seeded and diced
For the Herbs:
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
For the Assembly:
- 1/2 cup crumbled feta cheese (sheep’s milk feta preferred)
For the Dressing and Seasoning:
- black pepper, freshly ground, to taste
- 3 to 4 tbsp extra virgin olive oil (good quality, e.g. California Olive Ranch)
- zest of 1 medium lemon
- juice of 1 lemon
Instructions
- Boil the Water and Prep the Vegetables: Bring a large pot of water to a boil and generously season with sea salt. While waiting, seed and dice the bell pepper. Cut half an English cucumber lengthwise, slice, then dice it. Set the vegetables aside for later.
- Chop the Herbs: Finely chop fresh parsley and dill until you have about half a cup of each. These herbs will add freshness and vibrant flavor to the salad.
- Cook the Orzo Pasta: Once the water boils, add 1 cup of orzo and stir to prevent sticking. Cook the orzo for approximately 6 minutes until al dente—tender but still slightly firm to the bite. Drain and immediately rinse under cold water to stop the cooking and prevent clumping.
- Assemble the Salad: In a large salad bowl, combine the cooled orzo pasta, diced bell pepper, diced cucumber, chopped parsley, chopped dill, and crumbled feta cheese. Toss gently to mix.
- Season and Enjoy: Add lemon zest, lemon juice, freshly ground black pepper to taste, sea salt pinch, and 3 to 4 tablespoons of good quality extra virgin olive oil. Toss the salad well to evenly coat and blend the flavors. Serve chilled or at room temperature for a bright, refreshing pasta salad.
