Ingredients
For the Caramelized Onions
- 2 Tablespoons Olive Oil
- 4 Yellow Onions, thinly sliced
- 2 Sprigs Fresh Thyme, stems removed
- 3 Leaves Fresh Sage, chopped
For the Mashed Potatoes
- 2 Pounds Yukon Gold Potatoes, washed and chopped (skin on or peeled as preferred)
- 4 Tablespoons Salted Butter (or non-dairy butter)
- 3/4 Cup Half & Half or Full-Fat Coconut Milk or Dairy-Free Milk
- 1 Teaspoon Kosher Salt
- 1 Cup Parmesan Cheese, freshly grated
- 1 Bunch Chives, thinly chopped
Instructions
- Prepare Onions: Peel and thinly slice the yellow onions evenly. Set aside to use for caramelizing.
- Heat Skillet: Place a skillet over medium heat on the stove and add the olive oil. Wait until the oil is hot before adding onions.
- Caramelize Onions: Add the sliced onions to the hot oil and stir occasionally. Cook for approximately 40-50 minutes until the onions are deeply browned, caramelized, and shrunken.
- Prepare Potatoes: While onions cook, wash and chop the Yukon Gold potatoes into small pieces. You may keep the skin on for added texture and fiber.
- Boil Potatoes: Bring a pot of water to a rolling boil on the stove. Add the chopped potatoes and cook for about 20 minutes until fork tender.
- Drain Potatoes: Carefully drain the water from the boiled potatoes.
- Mash Potatoes: Mash the drained potatoes with butter, kosher salt, and your choice of half & half, full-fat coconut milk, or dairy-free milk until smooth and fully combined.
- Add Onions and Cheese: Remove caramelized onions from heat and fold half of them into the mashed potatoes along with the freshly grated Parmesan cheese.
- Stir Ingredients: Mix thoroughly ensuring the onions and cheese are evenly distributed throughout the potatoes.
- Garnish and Serve: Transfer mashed potatoes to a serving bowl and top with the remaining caramelized onions, chopped chives, thyme, sage, and a drizzle of melted butter. Serve warm and enjoy!
