Description

This hearty Beef Enchilada Casserole with Rice combines seasoned ground beef, black beans, corn, and enchilada sauce layered with sharp cheddar cheese in a baked casserole. Perfect for a comforting family dinner, this dish is flavorful and easy to prepare, with a delicious Tex-Mex flair.

Ingredients

Main Ingredients

  • 1 ½ pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounce can diced tomatoes
  • 10.75 ounce can red enchilada sauce
  • 15 ounce can black beans, drained and rinsed
  • 15 ounce can corn, drained
  • 1 cup cooked rice

Seasonings

  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes

Toppings

  • 1 ½ cups sharp cheddar cheese, shredded
  • ⅓ cup chopped cilantro
  • ¼ cup sliced green onions

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a 3-quart casserole dish with non-stick cooking spray and set aside to prevent sticking.
  2. Cook Ground Beef and Onions: In a large skillet or Dutch oven over medium heat, cook the ground beef and diced onions together until the beef is no longer pink and the onions become tender. This usually takes about 5-7 minutes.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 2 minutes, allowing the garlic to become fragrant. Then drain excess fat from the pan and return the mixture to heat.
  4. Combine Remaining Ingredients: Pour in the diced tomatoes, red enchilada sauce, black beans, corn, cooked rice, and all the listed seasonings – Slap Ya Mama seasoning, chili powder, ground cumin, garlic powder, black pepper, and red pepper flakes. Stir well to combine all ingredients evenly.
  5. Simmer: Bring the mixture to a gentle simmer. Cover the skillet or Dutch oven and let it cook for 10 minutes to deepen flavors and heat through, stirring occasionally.
  6. Assemble the Casserole: Spoon the hot beef and vegetable mixture into the prepared casserole dish, spreading it out evenly. Sprinkle the shredded sharp cheddar cheese over the top.
  7. Bake: Place the casserole dish in the preheated oven and bake until the cheese is melted, hot, and bubbly, about 15-20 minutes.
  8. Garnish and Serve: Remove from the oven and immediately sprinkle chopped cilantro and sliced green onions on top for freshness. Serve warm.

Notes

  • Use cooked rice chilled or freshly cooked; leftover rice works well for this recipe.
  • Adjust the heat by modifying or omitting red pepper flakes according to your spice preference.
  • For a lower fat version, use lean ground beef or substitute with ground turkey.
  • This casserole can be assembled ahead of time and refrigerated until ready to bake.
  • Leftovers reheat well in the microwave or oven.
