These Banana Split Breakfast Jars are a fresh and delicious morning treat, combining layers of bananas, Greek yogurt, granola, berry sorbet, and fresh berries, all topped with a drizzle of melted dark chocolate. Perfect for a quick, healthy, and visually appealing breakfast or snack.
Ingredients
For the Berry Sorbet:
- 2 1/2 cups frozen mixed berries
- 2 tsp freshly squeezed lemon juice
- 2 Tbsps raw honey
- 2-3 Tbsps warm water, only as needed
For the Banana Split Jars:
- 4 16-ounce mason jars
- 2 large bananas, cut in half then sliced lengthwise
- 1 cup fresh berries
- 1 cup plain or vanilla Greek yogurt
- 1 cup granola
- 4 scoops homemade berry sorbet
- 2 Tbsps melted dark chocolate
Instructions
- Make the Berry Sorbet: Place the frozen mixed berries, freshly squeezed lemon juice, raw honey, and warm water (start with 2 tablespoons) into a high-speed blender or food processor. Process until the mixture is smooth and creamy, stopping a few times to scrape down the sides. Add additional warm water if needed to achieve a creamy consistency.
- Freeze the Sorbet: Transfer the sorbet mixture into a freezer-safe container, cover it tightly, and freeze for at least 2 hours to firm up before serving.
- Prepare Banana Slices: Cut the bananas in half and then slice them lengthwise. Place half of the banana slices evenly into the bottom of each of the four 16-ounce mason jars in a visually pleasing arrangement.
- Assemble the Jars: Divide the Greek yogurt equally among the jars, layering it on top of the bananas. Follow by adding an equal amount of granola to each jar.
- Add Sorbet and Berries: Top each jar with one scoop of the homemade berry sorbet and then add the fresh berries evenly distributed over each jar.
- Finish with Chocolate Drizzle: Drizzle the melted dark chocolate over the assembled jars just before serving to add a rich finishing touch. Serve immediately for the best texture and taste.
