Ingredients

Vegetables

  • 1 pound sweet potatoes, cut into ½ to ¾-inch cubes
  • 1 medium red onion, peeled and sliced into ¾-inch wedges

Chicken

  • One 3 ½ to 4 pound chicken, cut into 8 pieces

Other

  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons balsamic vinegar, divided
  • 1 heaping cup frozen wild blueberries (no need to defrost)
  • 3 tablespoons whole-grain Dijon mustard
  • 1 tablespoon honey
  • 1 ½ teaspoons kosher salt
  • Freshly ground black pepper, to taste


Instructions

  1. Preheat the oven. Set your oven to 375 degrees Fahrenheit to ensure it’s ready for roasting the ingredients evenly.
  2. Prepare the vegetables. Cut the sweet potatoes into half to three-quarter inch cubes and peel and slice the red onion into wedges about three-quarters of an inch thick. Spread them out evenly on a large baking sheet.
  3. Toss vegetables with oil and vinegar. Drizzle the olive oil and 1 tablespoon of balsamic vinegar over the sweet potatoes and onions. Use your hands to gently toss everything together so the vegetables are well coated.

  5. Mix glaze. In a small bowl, whisk together the Dijon mustard, honey, and remaining tablespoon of balsamic vinegar to create a tangy glaze.
