Ingredients
Potatoes and Seasoning
- 2 large baking potatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 0.5 teaspoon red chilli flakes
- 2 tablespoons olive oil
Cheese and Flavoring
- 1 200g block of feta
- 1 head of garlic (top cut off)
- 1 lemon, halved
- 1 tablespoon honey
- 1/4 cup (20g) fresh basil
Instructions
- Preheat Oven: Preheat your oven to 200°C (390°F) to prepare for roasting the potatoes and garlic.
- Par-boil Potatoes: Wash and cube the baking potatoes. Place them in a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6-8 minutes (no more than 10) until just tender, then drain and steam dry for 2-3 minutes to remove excess moisture.
- Season Potatoes: Transfer the potatoes to a baking dish. Add dried thyme, oregano, salt, black pepper, and 2 tablespoons of olive oil. Stir well to coat the potatoes evenly with the seasonings and oil.
- Prepare Garlic: Drizzle the garlic head with a little olive oil, wrap it in foil, and place it in the baking dish among the potatoes.
- Roast Potatoes and Garlic: Roast in the preheated oven for 30-40 minutes until the potatoes are golden, crispy on the outside, and almost cooked through.
- Add Feta and Lemon: Remove the baking dish from the oven and take out the garlic. Place the feta block in the middle of the tray, coating it on one side with the seasonings if desired, then flipping it over. Squeeze half a lemon over the feta.
- Bake Feta: Return the baking dish to the oven and bake for an additional 15 minutes until the feta softens and starts to brown slightly.
- Mash Roasted Garlic: Allow the roasted garlic to cool, then squeeze the softened garlic out of its skins and mash it with the flat of a knife until smooth.
- Combine and Mix: Stir the mashed garlic and the juice from the other half of the lemon back into the baked potatoes in the tray along with the fresh basil. Gently mix the potatoes with the melted baked feta to combine all flavors.
- Finish and Serve: Drizzle the honey over the potato mixture, sprinkle with shredded basil and red chili flakes. Serve warm and enjoy the rich, aromatic flavors.
