Ingredients

Garlic Roasting

  • 3 Heads of Garlic
  • 6 teaspoons Extra Virgin Olive Oil (2 teaspoons per garlic head)

Brie and Bread

  • 1 Large Brie Wheel (13-14 ounces)
  • 1 Large Loaf of Baguette Bread

  • Heavy Duty Aluminum Foil
  • Parchment Paper
  • Baking Sheets


Instructions

  1. Roast the Garlic: Preheat your oven to 400°F. Remove loose papery outer layers from each garlic head but leave the tight fitting peel intact. Slice about ¼ inch off the top of each head to expose the cloves. Place each head on a roughly 12-inch square of heavy-duty aluminum foil. Drizzle 2 teaspoons of olive oil over each head, allowing it to seep into the cloves. Wrap each head tightly in the foil greasing them ready to roast. Place on a baking sheet and roast for 40-50 minutes until the cloves are golden and soft enough to spread like butter.
  2. Prepare the Oven and Bread: After roasting the garlic, remove it from the oven and turn the oven off momentarily to let it cool slightly. Then preheat the oven to 350°F. Slice the baguette into ½ inch rounds and arrange them on a baking sheet to ready for toasting.
  3. Bake the Brie: Line a baking sheet with parchment paper and place the brie wheel on it. Bake the brie for 15-20 minutes until the interior is melted and soft, indicated by a slight give when pressed gently.
  4. Toast the Bread: When the brie is almost done, place the baguette slices in the oven for the last 5-6 minutes to lightly toast them to a perfect crispness.
  5. Serve: To serve, spread a clove of the roasted garlic onto a toasted baguette slice and top generously with warm, melted brie. Enjoy this simple yet flavorful appetizer warm.
