Caramelized Onions

- 2 medium yellow onions, thinly sliced
- 1 tsp brown sugar
- 1/2 tsp fresh thyme leaves (optional)

- 1 tbsp olive oil
Pecans
- 1/3 cup pecan halves or pieces

Instructions
- Preheat the Oven: Preheat your oven to 350°F (180°C) to ensure it’s ready for baking the brie later on.
- Caramelize the Onions: In a skillet over medium-low heat, melt the butter with olive oil. Add the thinly sliced yellow onions and cook slowly for 15–20 minutes, stirring frequently, until they become deeply golden and very soft.
- Season the Onions: Stir in the brown sugar, fresh thyme leaves (if using), salt, and black pepper. Continue cooking for another 2–3 minutes until the onions are fully caramelized and jammy. Remove from the heat and set aside.
- Toast the Pecans: Heat a dry skillet over medium heat and toast the pecans for 3–5 minutes until fragrant and lightly browned. You can coarsely chop them after toasting if you prefer smaller pieces.
- Prepare the Brie: Place the brie wheel in a small baking dish. For a wrapped version, lay the thawed puff pastry sheet flat. Place the brie in the center, top with the caramelized onions and toasted pecans, then fold the pastry around the cheese. Brush the pastry surface with the beaten egg to achieve a golden crust.
- Top the Brie: If not wrapping with pastry, spoon the caramelized onions evenly over the brie wheel and scatter the toasted pecans on top to ensure each bite is flavorful.
- Bake the Brie: Bake uncovered for 15–18 minutes if using just the brie with toppings, until the cheese is soft and beginning to ooze. If using puff pastry, bake for 20–25 minutes until the crust turns a beautiful golden brown.
- Rest and Serve: Let the baked brie rest for 5 minutes after removing it from the oven. This allows the cheese to set slightly for easier serving. Serve warm with crackers or toasted baguette slices for dipping.
