Ingredients
Vegetables
- 3 cups butternut squash, peeled, seeded, and cubed
- 12 oz Brussels sprouts
- 5 cloves garlic, minced
- Fresh thyme, to taste
Pasta
- 8 oz bow tie pasta
Protein
- 12 oz cooked smoked sausage
Fats & Seasonings
- 1 tablespoon olive oil
- 2 tablespoons butter
- Salt and pepper, to taste
- 1/4 teaspoon smoked paprika, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the vegetables.
- Prepare Butternut Squash: Toss the cubed butternut squash with olive oil and season with salt and pepper. Spread the squash evenly on a baking sheet.
- Prepare Brussels Sprouts: Halve the Brussels sprouts, toss with olive oil, salt, and pepper, and add them to the baking sheet with the squash.
- Roast Vegetables: Roast the butternut squash and Brussels sprouts in the preheated oven for 25 to 30 minutes, until they are golden brown and tender.
- Cook Pasta: Meanwhile, cook the bow tie pasta according to the package instructions. Drain and set aside.
- Sauté Sausage and Garlic: Heat olive oil in a skillet over medium heat. Sauté the cooked smoked sausage until heated through. Add the minced garlic and cook until fragrant, about 1 to 2 minutes.
- Combine Ingredients: Add the roasted vegetables, cooked pasta, butter, smoked paprika, salt, pepper, and fresh thyme to the skillet. Toss gently to combine all flavors and melt the butter through the mixture.
- Serve: Serve the dish hot, garnished with additional fresh thyme if desired.
Notes
- Use smoked sausage that is already cooked to reduce cooking time.
- Adjust seasoning with smoked paprika and thyme based on your flavor preference.
- Roasting the vegetables brings out a natural sweetness and enhances their flavor.
- Bow tie pasta works well for this dish, but you can substitute with other short pasta shapes.
- For a vegetarian version, omit sausage and add more vegetables or plant-based protein.
