Ingredients
For the Stuffed Chicken:
- 2 chicken breasts, boneless & skinless
- 1 honeycrisp apple, cored and sliced thin
- 1 wedge of brie cheese, sliced
- Salt & pepper, to taste
For the Maple Glaze:
- 2 Tbsp maple syrup
- 1 tsp dijon mustard
- ¼ tsp dried thyme
- 1 garlic clove, minced
Instructions
- Make the Glaze: Whisk together maple syrup, dijon mustard, dried thyme, and minced garlic in a small bowl. Set the glaze aside until ready to use.
- Preheat Oven: Set your oven to preheat at 400°F (200°C) to prepare for roasting the stuffed chicken.
- Prepare Chicken: Place chicken breasts flat on a cutting board and carefully cut a slit about three-quarters of the way through each breast to create a pocket for stuffing. Season both sides generously with salt and pepper.
- Sear Chicken: Heat a large cast iron skillet over medium-high heat and add a splash of olive oil. Once hot, sear the chicken breasts for 2-3 minutes on each side until golden brown. Remove from heat.
- Stuff Chicken: Carefully stuff each chicken breast pocket with thin slices of Honeycrisp apple and Brie cheese. If desired, secure the opening with toothpicks to keep the filling intact during cooking.
- Glaze and Roast: Return the stuffed chicken breasts to the cast iron skillet. Brush the tops generously with the maple glaze. Transfer the skillet to the preheated oven and bake for 20-22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Serve: Remove from the oven and serve the chicken immediately, optionally drizzling with extra glaze on the side.
Notes
- If you don’t have a cast iron skillet, sear the chicken breasts in a regular skillet and then transfer them to a baking dish before roasting in the oven.
- For extra flavor, double the maple glaze recipe and keep half to brush on the chicken and the other half for serving as a dipping sauce.
- Using Honeycrisp apples provides a sweet and crisp contrast to the creamy Brie and savory chicken, but other sweet apple varieties can be used.
