Description
This 5-Ingredient Keto Butter Chicken is a quick, easy, and flavorful low-carb recipe perfect for a satisfying keto meal. Tender boneless chicken thighs are seared and simmered in a rich, creamy tomato and butter sauce infused with aromatic kasuri methi (dried fenugreek leaves), making it a delicious, keto-friendly adaptation of the classic Indian Butter Chicken.
Ingredients
Chicken
- 450 grams Boneless & Skinless Chicken Thighs
- Salt & Pepper to taste (optional)
Sauce
- 15 grams Butter
- 1 tsp Kasuri Methi (Dried Fenugreek Leaves)
- 150 ml Tomato Puree
- 100 ml Heavy Cream
- 1 tbsp Avocado Oil (optional)
- 50 ml Water (optional)
Instructions
- Season the chicken: Season the boneless chicken thighs evenly with salt and pepper to enhance the flavor before cooking.
- Heat the oil: Warm the avocado oil (if using) in a skillet over medium-high heat to prepare for searing the chicken.
- Sear the chicken: Place the chicken thighs in the hot skillet and sear each side for 3 to 4 minutes until golden brown and cooked through, then remove and set aside.
- Melt the butter: In the same skillet, add the butter and allow it to melt, utilizing the flavorful bits left from searing.
- Prepare the sauce: Stir in the tomato puree and kasuri methi, then add the water if desired. Cover the skillet and let the sauce simmer gently for 5 minutes to blend the flavors.
- Add the cream: Reduce the heat to low and stir in the heavy cream until the sauce is smooth and emulsified, creating a rich texture.
- Combine chicken and sauce: Return the seared chicken thighs to the skillet, spoon the sauce over them, and let everything simmer together on low heat for 1 to 2 minutes to meld flavors.
- Serve: Serve the keto butter chicken hot, ideally alongside cauliflower rice or keto-friendly naan for a complete meal.
Notes
- Use avocado oil or any neutral oil to sear the chicken; butter alone may burn at high heat.
- Kasuri methi adds an authentic flavor but can be omitted if unavailable or substituted with dried fenugreek powder.
- Water is optional in the sauce; add it to adjust the consistency if needed.
- For a thicker sauce, reduce the amount of water or simmer longer uncovered.
- This recipe is keto-friendly and low in carbs, making it perfect for ketogenic diets.
- Serve with cauliflower rice or keto naan to keep the meal low-carb.
