Ingredients
For the cake:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves (optional)
1 cup pumpkin puree
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup vegetable oil or melted butter
1/2 cup milk or buttermilk
1 tsp vanilla extract
For the crumble topping:
1/2 cup all-purpose flour
1/3 cup brown sugar
1 tsp ground cinnamon
1/4 cup cold butter, cubed
Optional: 1/4 cup chopped pecans or walnuts
For the glaze (optional):
1/2 cup powdered sugar
1–2 tbsp milk or cream
1/4 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish or a 9-inch springform pan.
- In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
- In another bowl, mix pumpkin, sugars, eggs, oil, milk, and vanilla until smooth.
- Combine wet and dry ingredients until just mixed.
- Pour batter into prepared pan and smooth the top.
- To make crumble, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly.
- Sprinkle crumble evenly over batter. Add nuts if using.
- Bake for 35–45 minutes or until a toothpick comes out clean.
- Let cool slightly. Mix glaze ingredients and drizzle over cake if desired.
Notes
Add mini chocolate chips or dried cranberries to the batter for a twist.
Top crumble with pecans for extra crunch.
Use maple syrup in the glaze for added fall flavor.
Make it dairy-free using almond milk and dairy-free butter.
