Description

Ultimate Autumn Pumpkin Spice Crumble Cake is a moist, warmly spiced pumpkin cake topped with a buttery crumble and optional glaze—perfect for fall gatherings or cozy moments at home.


Ingredients

For the cake:

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/4 tsp ground cloves (optional)

1 cup pumpkin puree

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1/2 cup vegetable oil or melted butter

1/2 cup milk or buttermilk

1 tsp vanilla extract

For the crumble topping:

1/2 cup all-purpose flour

1/3 cup brown sugar

1 tsp ground cinnamon

1/4 cup cold butter, cubed

Optional: 1/4 cup chopped pecans or walnuts

For the glaze (optional):

1/2 cup powdered sugar

12 tbsp milk or cream

1/4 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish or a 9-inch springform pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix pumpkin, sugars, eggs, oil, milk, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into prepared pan and smooth the top.
  6. To make crumble, mix flour, brown sugar, and cinnamon. Cut in butter until crumbly.
  7. Sprinkle crumble evenly over batter. Add nuts if using.
  8. Bake for 35–45 minutes or until a toothpick comes out clean.
  9. Let cool slightly. Mix glaze ingredients and drizzle over cake if desired.

Notes

Add mini chocolate chips or dried cranberries to the batter for a twist.

Top crumble with pecans for extra crunch.

Use maple syrup in the glaze for added fall flavor.

Make it dairy-free using almond milk and dairy-free butter.
