Description
Thanksgiving Peas are a quick and easy side dish made with green peas, butter, and fresh herbs. Light, colorful, and flavorful, they’re the perfect fresh complement to a rich holiday meal.
Ingredients
3 cups frozen or fresh green peas
2 tbsp unsalted butter
1 clove garlic, minced (or 1 small shallot, finely chopped, optional)
2 tbsp fresh parsley or dill, chopped
Salt and black pepper, to taste
1/2 tsp sugar or honey (optional)
1/2 tsp lemon zest (optional)
Instructions
- Bring a pot of salted water to a boil. Add peas and cook for 2–3 minutes if frozen or 4–5 minutes if fresh, until tender and bright green.
- Drain and transfer peas to a bowl of ice water to stop the cooking. After 1 minute, drain again.
- In a skillet over medium heat, melt the butter. Add garlic or shallots (if using) and sauté until fragrant.
- Add the peas to the skillet. Season with salt and pepper. Stir gently to coat in butter.
- Stir in sugar or honey if using, and toss with fresh herbs just before serving.
- Top with lemon zest for added brightness, if desired.
Notes
Add crispy bacon or pancetta for a savory twist.
Stir in Parmesan for richness and saltiness.
Make it creamy with a splash of cream or sour cream.
Add toasted almonds or pine nuts for crunch.
Can be served warm or chilled as a salad with lemon and olive oil.
