Ingredients
4 boneless, skinless chicken breasts or thighs
1 cup whole berry cranberry sauce (or homemade)
1 tbsp Dijon mustard
1 tbsp soy sauce or balsamic vinegar
2 tbsp honey or brown sugar
2 cloves garlic, minced
1 tbsp olive oil
1/2 tsp dried thyme or rosemary
Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine cranberry sauce, Dijon mustard, soy sauce (or balsamic vinegar), honey, minced garlic, olive oil, and dried herbs.
- Season chicken with salt and pepper on both sides.
- Place chicken in an oven-safe skillet or baking dish in a single layer. Pour cranberry glaze over the chicken, coating evenly.
- Bake uncovered for 25–30 minutes, spooning glaze over chicken halfway through.
- Ensure internal temperature reaches 165°F (74°C).
- Let chicken rest for a few minutes, then spoon extra glaze over before serving.
Notes
Add orange zest or juice to the glaze for a citrusy twist.
Include red pepper flakes or hot sauce for a spicier version.
Chicken thighs add more richness than breasts.
Garnish with fresh herbs or whole cranberries for a festive look.
Store leftovers in the fridge up to 4 days and reheat in a 325°F (160°C) oven.
