Description

Ingredients

4 boneless, skinless chicken breasts or thighs

1 cup whole berry cranberry sauce (or homemade)

1 tbsp Dijon mustard

1 tbsp soy sauce or balsamic vinegar

2 tbsp honey or brown sugar

2 cloves garlic, minced

1 tbsp olive oil

1/2 tsp dried thyme or rosemary

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cranberry sauce, Dijon mustard, soy sauce (or balsamic vinegar), honey, minced garlic, olive oil, and dried herbs.
  3. Season chicken with salt and pepper on both sides.
  4. Place chicken in an oven-safe skillet or baking dish in a single layer. Pour cranberry glaze over the chicken, coating evenly.
  5. Bake uncovered for 25–30 minutes, spooning glaze over chicken halfway through.
  6. Ensure internal temperature reaches 165°F (74°C).
  7. Let chicken rest for a few minutes, then spoon extra glaze over before serving.

Notes

Add orange zest or juice to the glaze for a citrusy twist.

Include red pepper flakes or hot sauce for a spicier version.

Chicken thighs add more richness than breasts.

Garnish with fresh herbs or whole cranberries for a festive look.
