Soft dough pockets stuffed with gooey cheese, topped with crispy pepperoni and herbs—perfectly poppable pizza bites for parties or snacks.
Ingredients
- 8 string cheese sticks, cut into thirds
- 1 can refrigerated pizza dough (about 16 oz)
- 2 tablespoons unsalted butter, melted
- 1 teaspoon Italian seasoning
- 24 slices mini pepperoni (or regular pepperoni cut smaller)
- 1 tablespoon grated Parmesan cheese
- Optional: marinara sauce for dipping
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out pizza dough and cut into 24 equal squares.
- Place one piece of cheese in the center of each square. Fold and pinch edges to seal into a bite-sized packet.
- Arrange bites seam-side down on the prepared sheet.
- Brush tops with melted butter, sprinkle with Italian seasoning, and press one pepperoni slice onto each.
- Bake 10–12 minutes until golden brown and puffed.
- Immediately sprinkle with Parmesan and serve warm with marinara.
Notes
- Customize fillings: swap pepperoni for cooked sausage crumbles or diced veggies.
- Use mozzarella cubes instead of string cheese for a different melt.
- Brush with garlic butter instead of plain butter for extra flavor.
- Add a pinch of red pepper flakes to the seasoning for heat.
- Assemble ahead and refrigerate bites up to 2 hours before baking.
- Freeze cooked bites in a single layer; reheat from frozen at 350°F (175°C) for 10–12 minutes.
