Ingredients
2 lbs boneless, skinless chicken thighs or breasts
4 garlic cloves, minced
1/4 cup fresh lemon juice
1 tbsp lemon zest
2 tbsp olive oil
1/2 cup low-sodium chicken broth
1 tsp dried oregano
1/2 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
Fresh parsley, chopped (for garnish)
Optional: lemon slices, for serving
Instructions
- Season chicken with salt, pepper, oregano, and thyme.
- In the slow cooker, whisk together lemon juice, lemon zest, olive oil, chicken broth, and garlic.
- Place chicken into the slow cooker, turning once to coat.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender and fully cooked.
- Serve with broth spooned over the chicken, garnished with parsley and optional lemon slices.
Notes
Add a splash of white wine to the broth for depth.
Toss in baby potatoes or carrots for a one-pot meal.
Stir in a pat of butter at the end for richness.
Add red pepper flakes for a spicy kick.
Thicken broth with a cornstarch slurry if desired.
