Description

Slow Cooker Lemon Garlic Chicken is a light, zesty, and tender chicken dish infused with fresh lemon, garlic, and herbs. It’s a simple, set-and-forget meal that pairs well with rice, potatoes, or veggies.


Ingredients

2 lbs boneless, skinless chicken thighs or breasts

4 garlic cloves, minced

1/4 cup fresh lemon juice

1 tbsp lemon zest

2 tbsp olive oil

1/2 cup low-sodium chicken broth

1 tsp dried oregano

1/2 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

Fresh parsley, chopped (for garnish)

Optional: lemon slices, for serving


Instructions

  1. Season chicken with salt, pepper, oregano, and thyme.
  2. In the slow cooker, whisk together lemon juice, lemon zest, olive oil, chicken broth, and garlic.
  3. Place chicken into the slow cooker, turning once to coat.
  4. Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender and fully cooked.
  5. Serve with broth spooned over the chicken, garnished with parsley and optional lemon slices.

Notes

Add a splash of white wine to the broth for depth.

Toss in baby potatoes or carrots for a one-pot meal.

Stir in a pat of butter at the end for richness.

Add red pepper flakes for a spicy kick.

Thicken broth with a cornstarch slurry if desired.
