Ingredients
For the Lamb Filling:
2 tablespoons olive oil
1 large onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
1 pound ground lamb
2 cloves garlic, minced
1 tablespoon tomato paste
1 cup beef broth
1 cup frozen peas
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon Worcestershire sauce
Salt and freshly ground black pepper, to taste
For the Mashed Potato Topping:
2.5 pounds russet potatoes, peeled and quartered
1/2 cup milk
4 tablespoons butter
1/4 cup grated Parmesan cheese (optional)
1 egg yolk (optional)

Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté onion, carrots, and celery for 8–10 minutes until softened.
- Add ground lamb and cook until browned. Drain excess fat.
- Stir in garlic and tomato paste; cook for 1 minute.
- Add beef broth, peas, rosemary, thyme, Worcestershire sauce, salt, and pepper. Simmer for 30 minutes.
- Meanwhile, boil potatoes in salted water for 15–20 minutes until tender. Drain and mash with milk, butter, Parmesan, egg yolk (if using), salt, and pepper.
- Spread lamb mixture into a 9×13 inch baking dish. Top evenly with mashed potatoes, creating swirls with a fork.
- Bake for 20–25 minutes, until golden and bubbly. Let rest 10–15 minutes before serving.
Notes
Swap lamb for ground beef for a Cottage Pie variation.
Use sweet potatoes or cauliflower mash for a twist or low-carb option.
Add extra veggies like corn, mushrooms, or green beans.
Assemble ahead and refrigerate until ready to bake—add 10 minutes to bake time.
Freezes well unbaked—thaw overnight in fridge before baking.
