Ingredients
12 oz smoked sausage or chicken sausage, sliced into rounds
2 large sweet potatoes, peeled and cubed
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
3 garlic cloves, minced
3 tbsp honey
2 tbsp soy sauce (or coconut aminos)
1/4 tsp red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 20 minutes.
- Slice sausage into rounds. After 20 minutes, add sausage to the baking sheet, toss, and roast for another 20 minutes until potatoes are tender and sausage is browned.
- Meanwhile, whisk honey, garlic, soy sauce, and red pepper flakes in a small bowl.
- Drizzle sauce over roasted sausage and potatoes, toss to coat, and return to oven for 5 minutes to caramelize.
- Sprinkle with fresh parsley and serve hot.
