Description

Ingredients

2 pounds carrots, peeled and cut into bite-size pieces

6 whole potatoes, diced into bite-size pieces (skins on)

1 whole sweet onion, cut into eighths

3 cloves garlic, minced

6 tablespoons olive oil

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

Salt and black pepper, to taste


Instructions

  1. Preheat the oven to 475°F (245°C).
  2. In a large bowl, combine carrots, potatoes, and onion. Add olive oil, garlic, thyme, parsley, salt, and pepper. Toss until evenly coated.
  3. Spread vegetables in a single layer on a rimmed baking sheet and cover tightly with foil.
  4. Roast for 45 minutes. Remove foil and continue roasting for 30 minutes, stirring every 10 minutes, until golden and crisp at the edges.
  5. Season to taste and serve warm.

Notes
