Description
Chewy pumpkin oatmeal cookies made with real pumpkin puree, oats, warm spices, and a touch of cinnamon—soft, cozy, and perfect for fall snacking or dessert.
Ingredients
1 1/2 cups old-fashioned rolled oats
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1 1/2 teaspoons ground cinnamon
1 teaspoon pumpkin pie spice
1/2 cup unsalted butter, melted and cooled (or 1/2 cup neutral oil)
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg, room temperature
1/2 cup pumpkin puree (not pumpkin pie filling)
1 teaspoon vanilla extract
Optional mix-ins (up to 1 cup): chocolate chips, chopped pecans or walnuts, dried cranberries, or raisins
Instructions
- In a large bowl, whisk oats, flour, baking soda, salt, cinnamon, and pumpkin pie spice.
- In another bowl, whisk melted butter with brown sugar and granulated sugar until glossy. Whisk in egg, pumpkin puree, and vanilla.
- Pour wet ingredients into dry and stir until just combined. Fold in mix-ins if using.
- Cover and chill dough for 20–30 minutes. Meanwhile, preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Scoop heaping tablespoon mounds (about 1 1/2 tbsp) onto sheets, spacing 2 inches apart. Gently flatten tops.
- Bake 11–13 minutes until edges are set and centers look slightly soft.
- Cool on pan for 5 minutes, then transfer to a rack to cool completely. Cookies will firm and turn chewy as they cool.
Notes
Add chopped pecans and finish with flaky salt for a nutty twist.
Mix in cocoa powder and chocolate chips for chocolate-pumpkin cookies.
Top cooled cookies with a maple glaze for extra sweetness.
Make gluten-free with a 1:1 GF flour blend and certified GF oats.
Boost fiber by replacing 1/4 cup flour with ground flaxseed or oat flour.
