Description

Chewy pumpkin oatmeal cookies made with real pumpkin puree, oats, warm spices, and a touch of cinnamon—soft, cozy, and perfect for fall snacking or dessert.


Ingredients

1 1/2 cups old-fashioned rolled oats

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fine salt

1 1/2 teaspoons ground cinnamon

1 teaspoon pumpkin pie spice

1/2 cup unsalted butter, melted and cooled (or 1/2 cup neutral oil)

3/4 cup packed light brown sugar

1/4 cup granulated sugar

1 large egg, room temperature

1/2 cup pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

Optional mix-ins (up to 1 cup): chocolate chips, chopped pecans or walnuts, dried cranberries, or raisins


Instructions

  1. In a large bowl, whisk oats, flour, baking soda, salt, cinnamon, and pumpkin pie spice.
  2. In another bowl, whisk melted butter with brown sugar and granulated sugar until glossy. Whisk in egg, pumpkin puree, and vanilla.
  3. Pour wet ingredients into dry and stir until just combined. Fold in mix-ins if using.
  4. Cover and chill dough for 20–30 minutes. Meanwhile, preheat oven to 350°F (175°C) and line baking sheets with parchment.
  5. Scoop heaping tablespoon mounds (about 1 1/2 tbsp) onto sheets, spacing 2 inches apart. Gently flatten tops.
  6. Bake 11–13 minutes until edges are set and centers look slightly soft.
  7. Cool on pan for 5 minutes, then transfer to a rack to cool completely. Cookies will firm and turn chewy as they cool.

Notes

Add chopped pecans and finish with flaky salt for a nutty twist.

Mix in cocoa powder and chocolate chips for chocolate-pumpkin cookies.

Top cooled cookies with a maple glaze for extra sweetness.

Make gluten-free with a 1:1 GF flour blend and certified GF oats.

Boost fiber by replacing 1/4 cup flour with ground flaxseed or oat flour.
