Description

Ingredients

4 boneless, skinless chicken breasts

1/2 cup grated Parmesan cheese

1/2 cup bread crumbs (Italian-style or Panko)

2 eggs, beaten

1/3 cup flour

Salt and pepper, to taste

2 tablespoons olive oil or butter (for frying)

3 cloves garlic, minced

2 tablespoons butter (for sauce)

1 cup heavy cream

1/2 cup chicken broth

1/3 cup grated Parmesan cheese (for sauce)

Chopped parsley (optional, for garnish)


Instructions

  1. Flatten chicken breasts to an even thickness using a meat mallet or rolling pin. Season both sides with salt and pepper.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of Parmesan and breadcrumbs.
  3. Dredge each chicken breast in flour, then dip in egg, and coat in Parmesan-breadcrumb mixture.
  4. Heat olive oil or butter in a skillet over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Set aside.
  5. In the same skillet, melt butter and sauté minced garlic until fragrant (about 1 minute).
  6. Add chicken broth and scrape up browned bits. Stir in heavy cream and bring to a gentle simmer.
  7. Add grated Parmesan and stir until melted and sauce thickens slightly.
  8. Return chicken to the skillet or serve with sauce spooned over top. Garnish with chopped parsley if desired.

Notes

Add red pepper flakes to the sauce for heat.

Use gluten-free breadcrumbs and almond flour for a gluten-free version.

Stir mushrooms or spinach into the sauce for extra texture and flavor.

Substitute heavy cream with half-and-half or milk for a lighter sauce.

Store leftovers in the fridge for up to 3 days. Reheat gently to keep the sauce smooth.
