Description

Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion are a quick and flavorful twist on traditional quesadillas, combining fresh Mediterranean ingredients for a nutritious and satisfying meal. Ready in just 15 minutes, this recipe is perfect for busy weeknights or casual gatherings, featuring a blend of cheeses and vegetables for a deliciously crispy and warm dish.

Ingredients

Quesadilla Filling

  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • Black pepper (to taste)

For Cooking

  • 4 flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Prepare the filling: In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix thoroughly to evenly distribute all ingredients.
  2. Assemble the quesadillas: Lay one flour tortilla flat on a clean surface and place one-fourth of the filling mixture on one half of the tortilla. Fold the other half over the filling to create a half-moon shape.
  3. Heat the skillet: Place a non-stick skillet over medium heat and add the olive oil, allowing it to warm evenly.
  4. Cook the quesadillas: Place the folded tortilla in the heated skillet and cook for 3-4 minutes or until the bottom side turns golden brown and crispy.
  5. Flip and finish cooking: Carefully flip the quesadilla and cook the other side for another 3-4 minutes until crispy and the cheeses inside are melted.
  6. Serve: Remove the cooked quesadilla from the skillet, slice into wedges, and serve warm. Repeat steps for the remaining tortillas and filling.

Notes

  • For a vegetarian version, this recipe is naturally suitable as is.
  • You can substitute spinach with kale or arugula for variation.
  • Serve with a side of tzatziki sauce or your favorite dip for extra Mediterranean flavor.
  • Use whole wheat tortillas for added fiber and nutrients.
  • To make it vegan, replace cheeses with plant-based alternatives.
