Marry Me Salmon is a quick yet elegant dish featuring seared salmon fillets in a creamy, garlicky sun-dried tomato sauce with Parmesan and herbs—perfect for weeknights or special occasions.
Ingredients
4 salmon fillets
1 teaspoon dried basil
½ teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon red pepper flakes (adjust to taste)
1 cup chicken broth or stock
1 cup heavy cream
½ cup chopped sun-dried tomatoes
3 cloves garlic, minced
½ cup freshly grated Parmesan cheese
2 tablespoons fresh basil, thinly sliced
2 tablespoons olive oil
1 teaspoon kosher salt (or to taste)
½ teaspoon black pepper
Instructions
- In a small bowl, mix dried basil, thyme, garlic powder, onion powder, red pepper flakes, salt, and pepper.
- Season salmon fillets with half of the spice blend on both sides.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon flesh-side down for about 5 minutes per side until golden brown. Transfer to a plate.
- Lower heat and add sun-dried tomatoes (and a little of their oil, if desired) plus minced garlic. Cook for 1–2 minutes until fragrant.
- Pour in chicken broth, scraping up browned bits from the pan.
- Stir in heavy cream, Parmesan, and remaining spice blend. Cook over medium-low heat for 10–15 minutes, stirring occasionally, until sauce thickens.
- Return salmon to the skillet, spoon sauce over the top, and simmer for 3–5 minutes until heated through and cooked to desired doneness.
- Garnish with fresh basil before serving.
Notes
For a dairy-free option, use vegan cream and dairy-free Parmesan.
Reduce red pepper flakes for a milder version.
Substitute Italian seasoning for the dried basil and thyme if preferred.
Add spinach or kale during the last few minutes for extra greens.
Pairs well with pasta, rice, or crusty bread to soak up the sauce.
