Description

Hogwarts Houses Butterbeer Swirl Cheesecake is a magical dessert featuring a creamy butterbeer-infused filling with vibrant house-colored swirls over a graham cracker crust. Perfect for Harry Potter fans and festive occasions.

Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

2 tablespoons granulated sugar

5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

24 oz cream cheese, softened

1 cup granulated sugar

½ cup sour cream

1 teaspoon vanilla extract

3 large eggs

½ cup cream soda

For the Butterbeer Swirls:

¼ cup heavy cream

¼ cup brown sugar

2 tablespoons unsalted butter

½ teaspoon vanilla extract

Gel food coloring: red, yellow, blue, and green

Instructions

  1. Preheat oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat cream cheese until smooth. Add granulated sugar and mix until fully combined. Blend in sour cream, vanilla, and cream soda. Add eggs one at a time, mixing just until incorporated.
  3. In a saucepan over medium heat, melt butter and stir in brown sugar. Add heavy cream and vanilla extract. Whisk until smooth. Divide into 4 bowls and add red, yellow, blue, and green gel food coloring to each.
  4. Pour cheesecake batter over crust. Drop spoonfuls of each colored swirl on top and use a skewer to marble the colors.
  5. Bake for 50–55 minutes until center is slightly jiggly. Turn off oven, crack the door, and let cool gradually.
  6. Chill in the refrigerator for at least 4 hours or overnight before serving. Optional: top with edible gold dust or sprinkles.

Notes

Use gel food coloring for vibrant hues without thinning the swirl mixture.

Letting the cheesecake cool slowly in the oven helps prevent cracks.

Substitute gluten-free graham crackers for a gluten-free version.

Make ahead and chill overnight for best texture.

Store slices in the freezer wrapped tightly for up to 3 months.
