Ingredients
1 pound ground beef
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon paprika
½ teaspoon dried oregano
½ teaspoon dried thyme
2 tablespoons tomato paste
4 cups beef broth
1 cup uncooked orzo pasta
1 can (14.5 oz) diced tomatoes
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional, for serving)
Instructions
- In a large skillet over medium heat, cook ground beef until browned, breaking up with a spoon; drain excess fat if needed.
- Add diced onion and garlic; cook 2–3 minutes until softened and fragrant.
- Stir in paprika, oregano, and thyme; toast spices 30 seconds.
- Add tomato paste, stirring to coat beef and onions evenly.
- Pour in beef broth, diced tomatoes, and orzo; stir to combine.
- Bring to a boil, then reduce heat to a simmer. Cover and cook 12–15 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Season with salt and pepper. Garnish with parsley and Parmesan before serving.
