Description
A hearty, one-pot crockpot meal featuring juicy chicken and tender potatoes slow-cooked in a rich garlic-parmesan sauce. Easy, comforting, and full of flavor.
Ingredients
4 boneless, skinless chicken thighs or breasts
1.5 pounds baby potatoes, halved (or diced Yukon gold potatoes)
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1/4 cup butter, melted
1 teaspoon Italian seasoning
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Place halved potatoes in the bottom of the crockpot to form a bed for the chicken.
- Season chicken with salt, pepper, and Italian seasoning, then place on top of the potatoes.
- In a bowl, mix melted butter, garlic, chicken broth, and Parmesan cheese.
- Pour the garlic-parmesan mixture evenly over the chicken and potatoes.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and potatoes are fork-soft.
- Before serving, gently stir and garnish with fresh parsley.
Notes
Add vegetables like green beans or baby carrots during the last hour of cooking.
For a creamier dish, stir in heavy cream or sour cream before serving.
Sweet potatoes can be used for a sweeter variation.
Red pepper flakes add a spicy kick if desired.
Bone-in chicken works but may need more cooking time.
