Garlic Parmesan Chicken Meatloaf is a lighter twist on the classic comfort food, made with ground chicken, garlic, and Parmesan cheese. Juicy, tender, and full of Italian-inspired flavor, it’s a cozy yet wholesome dinner option.
Ingredients
1 1/2 lbs ground chicken
1/2 cup grated Parmesan cheese
3 garlic cloves, minced
3/4 cup breadcrumbs (plain or Italian)
1 large egg
1/4 cup milk
1/2 small onion, finely diced
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
Fresh parsley, chopped (for garnish)
Optional topping: extra Parmesan or a mix of Parmesan and mozzarella
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
- In a large bowl, combine ground chicken, Parmesan, garlic, breadcrumbs, egg, milk, onion, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Shape mixture into a loaf on the baking sheet or press into loaf pan.
- If desired, sprinkle Parmesan or mozzarella over the top.
- Bake for 45–50 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest 5–10 minutes before slicing. Garnish with fresh parsley and serve.
Notes
Add chopped spinach or shredded zucchini for extra veggies.
For a spicier version, mix in red pepper flakes or cayenne.
Stuff the center with mozzarella cubes for a cheesy surprise.
Use crushed crackers, rolled oats, or almond flour instead of breadcrumbs if needed.
Make ahead: prepare and shape loaf up to 24 hours in advance, refrigerate, then bake when ready.
