Description

Fiesta Lime Chicken with Avocado Salsa is a bold and zesty dish featuring juicy chili-lime marinated chicken topped with a creamy avocado corn salsa. It’s a fresh, healthy meal perfect for weeknights or summer gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon chili powder
  • 1/2 teaspoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon brown sugar

Instructions

  1. Pound chicken to even thickness using a mallet or heavy object between plastic wrap or in a freezer bag.
  2. In a bowl, whisk together olive oil, lime juice, lime zest, and all seasonings to create the wet rub.
  3. Coat chicken thoroughly in the rub and let it marinate for at least 30 minutes (up to 2 hours for deeper flavor).
  4. Grill or sear chicken over medium-high heat for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C). Alternatively, bake at 400°F (205°C) for 20–25 minutes.
  5. Serve hot, topped with avocado corn salsa.

Notes

  • Use boneless thighs for juicier chicken.
  • Top with cotija or pepper jack cheese for extra flavor.
  • Make it a rice bowl with black beans and cilantro-lime rice.
  • Oven baking works great for bad weather days.
  • Double the rub and freeze extra chicken for easy meal prep.
