Description

Espresso Mascarpone Ricotta Brownies are ultra-rich, fudgy chocolate brownies swirled with a creamy mascarpone-ricotta layer and infused with espresso for depth. A sophisticated twist on the classic treat, perfect for coffee and chocolate lovers.


Ingredients

For the brownie base:

1/2 cup unsalted butter

6 oz semisweet chocolate (chopped or chips)

3/4 cup granulated sugar

1/4 cup brown sugar

2 large eggs

1 tsp vanilla extract

2/3 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1 tbsp instant espresso powder

1/2 tsp salt

For the mascarpone ricotta swirl:

4 oz mascarpone cheese

4 oz ricotta cheese (whole milk or part-skim)

1/4 cup granulated sugar

1 egg yolk

1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan, melt butter and chocolate over low heat, stirring until smooth. Let cool slightly.
  3. Whisk in granulated sugar, brown sugar, eggs, and vanilla until glossy.
  4. In a bowl, sift together flour, cocoa powder, espresso powder, and salt. Stir into the chocolate mixture just until combined.
  5. In a separate bowl, mix mascarpone, ricotta, sugar, egg yolk, and vanilla until smooth.
  6. Pour most of the brownie batter into the pan, reserving about 1/2 cup. Dollop the cheese mixture over the batter and swirl gently with a knife. Drizzle reserved brownie batter on top and swirl again.
  7. Bake for 35–40 minutes, or until the center is set and a toothpick comes out with moist crumbs.
  8. Cool completely in the pan before slicing into squares.

Notes

Add chopped dark chocolate or espresso beans for texture.

Use less espresso powder for a milder flavor.

Add orange zest to the cheese mixture for a citrusy twist.

Substitute mascarpone or ricotta with cream cheese if needed.

Chill before slicing for clean edges.
