Honey Feta Sweet Potato Rounds are roasted sweet potato slices topped with creamy feta, a drizzle of honey, and fresh herbs. This sweet and savory combo makes for a perfect appetizer, side dish, or snack that’s both elegant and easy.
Ingredients
2 large sweet potatoes
2 tbsp olive oil
Salt and black pepper to taste
1/2 cup crumbled feta cheese
2 tbsp honey
1 tsp fresh thyme or rosemary (optional)
Optional toppings: 2 tbsp chopped walnuts, 2 tbsp pomegranate seeds, pinch of chili flakes
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and slice sweet potatoes into ½-inch thick rounds, leaving the skin on.
- Toss rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
- Transfer to a serving plate and immediately sprinkle with crumbled feta while warm.
- Drizzle with honey and top with fresh thyme or rosemary.
- Add optional toppings like walnuts, pomegranate seeds, or chili flakes if desired. Serve warm.
Notes
Goat cheese can be used instead of feta for a creamier taste.
Use maple syrup or agave for a vegan version.
Best served warm, but also delicious at room temperature.
For extra flavor, try hot honey or a balsamic glaze instead of plain honey.
Reheat in the oven to keep them crisp—avoid the microwave.
