Description

Ingredients

2 large sweet potatoes

2 tbsp olive oil

Salt and black pepper to taste

1/2 cup crumbled feta cheese

2 tbsp honey

1 tsp fresh thyme or rosemary (optional)

Optional toppings: 2 tbsp chopped walnuts, 2 tbsp pomegranate seeds, pinch of chili flakes


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and slice sweet potatoes into ½-inch thick rounds, leaving the skin on.
  3. Toss rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  4. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  5. Transfer to a serving plate and immediately sprinkle with crumbled feta while warm.
  6. Drizzle with honey and top with fresh thyme or rosemary.
  7. Add optional toppings like walnuts, pomegranate seeds, or chili flakes if desired. Serve warm.

Notes

Goat cheese can be used instead of feta for a creamier taste.

Use maple syrup or agave for a vegan version.

Best served warm, but also delicious at room temperature.

For extra flavor, try hot honey or a balsamic glaze instead of plain honey.

Reheat in the oven to keep them crisp—avoid the microwave.
