Description

Golden, crispy keto roll-ups filled with creamy vanilla cream cheese and fresh blueberries—an indulgent yet low-carb treat made in the air fryer in just minutes.


Ingredients

6 zero-carb small keto tortillas

1/3 cup fresh blueberries

6 ounces cream cheese, softened

2 tbsp plain Greek yogurt

1 tsp vanilla extract

3 tbsp Swerve confectioner’s sugar substitute (plus extra for dusting)

2 tbsp butter, melted


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, mix cream cheese, Greek yogurt, vanilla, and Swerve until smooth and creamy.
  3. Spread a line of the mixture down the center of each tortilla.
  4. Top with fresh blueberries and roll tortillas tightly. Place seam-side down on greased air fryer rack.
  5. Brush tops with melted butter.
  6. Air fry for 8–10 minutes, until golden and crispy.
  7. Dust lightly with additional Swerve before serving.

Notes

Swap blueberries for raspberries or strawberries for variety.

Add a spoon of peanut or almond butter to the filling for richness.

Sprinkle cinnamon into the filling or on top for extra flavor.

Bake in oven at 375°F for 15 minutes, flipping halfway, if no air fryer is available.
