Ingredients
3 large eggs
3/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon anise extract, vanilla, or almond extract
Optional: 1 tablespoon lemon or orange zest, 1 tablespoon cocoa powder, 1 teaspoon cinnamon, 1 teaspoon espresso powder, or 1/4 cup mini chocolate chips
Instructions
- Whisk together eggs and sugar until light and frothy.
- Stir in melted butter and your chosen extract or flavoring.
- In a separate bowl, mix flour, baking powder, salt, and any dry twist ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring until a thick, smooth batter forms.
- Preheat pizzelle or waffle iron according to manufacturer instructions.
- Drop small spoonfuls of batter onto the iron, close the lid, and cook each cookie for 30–60 seconds or until golden and crisp.
- Remove carefully and cool flat on a rack or shape while warm as desired.
Notes
Cool cookies completely before storing to retain crispness.
Re-crisp softened cookies in a low oven at 250°F for a few minutes.
Freeze in layers with wax paper between cookies for up to a month.
Experiment with sweet or savory twists, like herbs and cheese.
Use a regular waffle iron with shallow plates if pizzelle iron is unavailable.
