Ingredients
3 cups cooked shredded chicken

4 tablespoons unsalted butter, melted
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon poppy seeds (optional)
1 cup small broccoli florets, peas, or corn (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 2.5–3 quart baking dish.
- In a large bowl, whisk together cream soup and sour cream until smooth. Season with salt and pepper.
- Fold in shredded chicken and any optional vegetables.
- Spread mixture evenly into prepared baking dish.
- In a separate bowl, combine crushed Ritz crackers with melted butter and poppy seeds (if using).
- Sprinkle cracker mixture evenly over the chicken filling.
- Bake for 25–30 minutes, until topping is golden and edges are bubbly.
- Let rest for 5 minutes before serving.
