Description

Creamy Chicken Marsala is a quick and comforting Italian-American dish made with pan-seared chicken breasts in a rich Marsala wine, cream, and mushroom sauce.


Ingredients

4 boneless skinless chicken breasts, thinly sliced or cut in half

Salt and pepper, to season

2 tablespoons olive oil

1 1/2 cups sliced mushrooms

1/2 cup Marsala wine (or substitute)

1/2 cup chicken broth

1 cup heavy whipping cream

1 teaspoon ground mustard

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season chicken with salt and pepper, then sear until golden brown and cooked through. Remove and set aside.
  3. Add the remaining tablespoon of olive oil to the skillet and sauté the mushrooms for 1–2 minutes.
  4. Pour in Marsala wine and boil for 1–2 minutes to cook off the alcohol.
  5. Add chicken broth, heavy cream, ground mustard, and garlic powder. Bring to a boil, then reduce heat and simmer for about 10 minutes until the sauce thickens.
  6. Return the chicken to the skillet and simmer in the sauce for 1–2 more minutes.
  7. Garnish with chopped fresh parsley before serving.

Notes

Boneless chicken thighs can be used for extra juiciness.

Swap heavy cream with half-and-half for a lighter version.

Add spinach before serving for extra nutrients and color.

Dry sherry or white wine with a pinch of sugar can substitute Marsala wine.

Use coconut milk for a dairy-free alternative.
