Description
This Chocolate Lava Soufflé is an elegant yet simple dessert with a crisp shell and gooey molten center. Made with dark chocolate, butter, eggs, and a touch of flour, it’s the perfect indulgence for date nights or special occasions — ready in under 30 minutes.
Ingredients
4 oz dark chocolate (60–70% cocoa)
4 tbsp unsalted butter (plus extra for greasing)
2 large eggs
1/4 cup granulated sugar
2 tbsp all-purpose flour
1/2 tsp vanilla extract (optional)
Pinch of salt
Cocoa powder (for dusting ramekins)
Instructions
- Preheat oven to 390°F (200°C). Grease 2–3 ramekins with butter and dust with cocoa powder, tapping out excess.
- Melt dark chocolate and butter together in a heatproof bowl using a double boiler or microwave in 30-second intervals. Stir until smooth and let cool slightly.
- In a separate bowl, whisk eggs, sugar, and optional vanilla for 2–3 minutes until pale and foamy.
- Gently fold melted chocolate into egg mixture. Sift in flour and add a pinch of salt. Mix until just combined, being careful not to overmix.
- Divide batter into ramekins, filling ¾ full.
- Bake 9–11 minutes until edges are set but centers remain soft and slightly jiggly.
- Serve immediately with powdered sugar, ice cream, or berries.
Notes
Add espresso powder or orange zest for extra flavor.
For a boozy twist, add 1 tbsp dark rum or coffee liqueur to the batter.
Place a chocolate square or spoonful of peanut butter in the center before baking for a surprise filling.
Skip flour for a fudgier, flourless version (reduce baking time slightly).
Batter can be made ahead and refrigerated; just add 1 extra minute to bake time.
